I love corn grits too - totally gluten free (and free of soy lechtin too!) To add a little protien to the bf I have 2 egg whites mixed w/ one whole egg. GF Lunch is the hardest meal for me but in a pinch there's always a salad!

So far so good. I have been enjoying the change in diet and feel excellent energy-wise. All that has stood out this early on, is that I feel less bogged down digesting my morning gluten free hot cereal, than I do after the usual sprouted grain toast…

About me
I started competing as a professional triathlete in 2008 and I won Ironman Coeur d'Alene while still working full-time as a scientist with Natural Resources Canada. In February of 2009, my husband and I decided to bite the bullet and fully commit our dream of being World Class Long Distance Triathletes. We sold our home in Victoria, Canada, bought an RV, and traveled to southern California to train full-time. We live on the road with 100% passion to our sport.

If I can bake GF-bread, so can you!

A lot of people that go gluten free miss bread more than anything else. It's an excellent platform on which to spread yummy things, you can put two pieces together for a sandwich and stuff it in a jersey pocket, dunk it in soup, soak up sauce... it is an all around handy calorie source.
However, a lot of pre-made GF breads either totally suck, or cost a ridiculous amount per loaf ($11 honestly!??!?)

Going long-term

My unstructured holiday training is coming to an end as of tomorrow with an early group swim including a 2000m time trial just for kicks.
I managed to stay pretty gluten free over the holidays, but every time I fell of the wagon I payed for it!

Gluten test on day 5

After eating gluten free for 4 days, I decided to have a gluten free-for-all (a.k.a my regular diet) on day 5, yesterday, to see if I noticed anything.

Here is what I had:
Breakie: small bowl cheerios with banana and almond milk, two pcs sprouted grain raisin toast with Earth Balance, no soy, butter-like substance.
Post swim: orange
Lunch: spinach salad with tomato, yellow pepper, cucumber, brown rice and a bit of salmon with homemade balsamic dressing
Run, Medicine ball core stuff

Gluten free - 2 days in
